No-bake cookies were a childhood favorite. The chocolate and the peanut butter bite-size goodies were frequent treats in my house. So, I decided to see if I could come up with a healther version of this. And I did! Give them a try and let me know how they turn out!
1 cup almond milk
1/4 cup coconut oil
Bring to a boil and stir for 1 minute.
Remove from heat and stir in 1 cup peanut butter and 1tsp vanilla.
Stir in 3 cups oats
Stir until coated, then shape into cookies on wax paper while the mixture is still warm.
This recipe came out a little dry for me. Some of the cookies fell apart. Next time, I'm going to add a spoonful or 2 of honey to the almond milk and coconut oil.
