Even though fall doesn't quite feel like fall in South Florida, I still love pumpkin! But, there's got to be healthier choices than pumpkin lattes and pumpkin cream cheese muffins, right? So I made a batch of pumpkin protein bars! Here's the recipe! Enjoy!
2 1/2 cup oats (bake at 350 for 15 min or until brown)
Mix in bowl with:
1 cup organic canned pumpkin
1 cup organic natural peanut or almond butter
1 packet of IsaLean Shake (I used my berry and it tastes great, but I bet Vanilla would be bangin'!)
1/2 cup of raisins or whatever other mix in you want (I think I'm going to do the dark chocolate IsaDelights next time)
1 spoonful of IsaCrunch
Splash of almond milk if your mixture is too dry to stir
A few shakes of cinnamon, nutmeg or pumpkin spice
Spread in baking dish (I used 2 9x9 pans- it doesn't quite spread all the way to the edge in both, just sort of a glob in the middle. I also did a thicker spread because I wanted to be sure they were chewy)
Bake at 350 for about 20 min for chewy, longer for crunchy
Cut when cool. Use the weird, broken-off bits for granola!
